I whipped up this delicious Salmon Spread in less than 5 minutes (it’s delicious with a warm baguette!):
I used my Kitchenaid Mixer, but you can use any mixer. After adding all of the ingredients in the mixing bowl, I put it on medium high and let it whip. It keeps very well in a sealed container in the refrigerator. I believe it’s the Horseradish that’s the key to the awesome, addictive taste!
*Tip: It’s a wonderful lunch idea for the road! We’re always looking for ways to eat healthy on the road and we find a little forethought is all that’s needed to avoid fast food restaurants. Plus we get to save money!! More money for shopping!!
Secret: Not too long ago, we (hubby and me) could not even look at anything containing cheese, for fear of a terrible belly ache (the whole lactose intolerant thing). But we’ve discovered two secrets that have freed us from the torturing effects of being lactose intolerant:
1. Did you know you can purchase lactose-free cheeses (they taste like your regular cheese without the lactose)! What?? I’m doing a little victory dance right now!
2. Did you know you if you chew 3 of these enzyme tablets just before eating a lactose product, you will not have a reaction? They really work! We carry them everywhere we go now.
Like I said… FREEDOM!!
So here is what you will need to make this Salmon Spread / Dip-
1 can of Red Sockeye Salmon (drained)- I get mine a Costco.
1 package of 8-oz cream cheese (softened)
¼ tsp of hot sauce
2 tsps of Horseradish (you can make your own without the nasty chemicals)
¼ tsp sea salt (you can use other types of salt too)
A few tbsps of green onion (chopped fine)
1 tbsp fresh lemon juice (squeezed)
¼ tsp or Worcestershire sauce (you can also make your own without the preservatives)
