Chocolate-Banana Pudding (Dairy Free)

So I fell upon this chia seed pudding recipe while surfing the internet and I decided to give it a try…  I was not impressed with the results and the chia seeds had all sunk to the bottom of the container forming a thick muck of seeds which separated from the rest of the pudding mixture.  So, I pondered on it and decided to try something saving this mixture because I just refuse to throw out such wonderful ingredients.  So, I poured the failed pudding mixture in my Vita-Mix blender (any blender would do), and added 1/2 of a large banana.  I blended until the mixture was smooth with no visible traces of whole Chia seeds, and then stored in the refrigerator for a few hours and voila:  A lovely, chocolate-banana pudding that is as yummy as it looks in the photograph!

Here are the ingredients I used:

1-1/4 cups of vanilla, almond milk (unsweetened)

1 TBSP Honey

1/4 tsp sea salt

3 TBSPS Cocoa

1/4 cup of Chia Seeds

1/2 large banana.

*Top with slivered almonds and grated dark chocolate.

Directions: 

Add all of the above ingredients into a blender and blend until chia seeds are visibly ground into a powder; Pour into a sealed container and refrigerate overnight.

I’m thinking this mixture could be awesome in a pie as well!
