Drop Spelt Biscuits Recipe: Quick and Delicious!

As you know by now, I am loving “Spelt Flour!”  The nutty flavor is addictive and I especially cannot get enough of “Spelt Biscuits.”  The following recipe makes the tastiest biscuits I have ever eaten!

Plus they only take a few minutes to whip up.  I make these for breakfast; there is nothing like warm biscuits with homemade jam and tea!

Drop Spelt Biscuits

Preheat over 400°F (Bake 10 minutes)-

Prepare a cookie sheet or (I use a pizza stone).

Mix together your dry ingredients in a larger bowl:

-1 1/2 cups of Spelt Flour (you can purchase it online here)

-3/4 tsp of sea salt

-2 tsps of baking powder (aluminum free)

In a second, smaller bowl combine the following wet ingredients:

-1/2 cup of coconut oil (melted)

-3/4 cup of rice milk (or other milk you have on hand)

Set aside this mixture.

Make a little well in the center of your dry ingredients and pour all at once your wet ingredients mixture and gently combine with a fork until all of the ingredients form a dough.  *At first, you will get the impression that it’s not firm enough and that there is too much liquid but give it a minute, it will firm up.  At this point, scoop up some of the dough and drop onto your non-stick cookie sheet, or you could also use a parchment paper over your cookie sheet (I use a pizza stone- I do not grease it; it will stick a bit, but comes right off with a spatula).

Bake for like 10 minutes (I usually go by how it smells- strange, but when it smells really nice, it usually is cooked.  I think it will depend on your oven.  So keep an eye on them.
